Phoenix Flavor Forecast: 5 Functional Beverage Trends for August 2025

With functional beverages continuing to dominate innovation pipelines, flavor is becoming a key differentiator in attracting health-conscious consumers.

We sat down with Brandon Olson, Senior Flavorist at Phoenix, to discuss the five flavor and sensory cues shaping the next wave of probiotic, prebiotic, and mental wellness drinks — as well as how soda brands can reinvent themselves for the better-for-you market.

  1. Citrus for Digestive Wellness

When it comes to probiotic and prebiotic beverages, citrus flavors take the lead.

“Citrus flavors best signal digestive wellness,” Olson explains. “They tend to be gentler on the stomach and more effectively mask the slight bitterness of probiotics.”

From lemon to yuzu, bright citrus notes not only align with consumer perceptions of freshness and health, but also play a functional role in balancing taste.

2. Florals for Calm and Focus

Floral flavors are making their way into mental wellness beverages, delivering mood and focus benefits while tapping into the sensory connection between aroma and emotion.

“Lavender and vanilla are traditionally thought to be relaxing and calming,” says Olson. “These typically do not have added acids, which promotes the soothing concept.”

These profiles also pair well with adaptogens and nootropics, offering a gentle, spa-like flavor experience.

3. Reinventing Soda the Health-Forward Way

Soda brands are facing pressure to innovate beyond sugar-laden classics. Olson sees an opportunity in botanicals and plant-forward profiles:

“Good marketing within soda companies can focus on more plant-based flavors like hibiscus and mint as opposed to traditional sugary soda flavors like grape and orange.”

This shift not only diversifies the flavor landscape but also taps into the clean-label movement.

4. Flavor Strategies for Multi-Benefit Beverages

Combining hydration, gut health, and mental wellness in a single beverage is no easy task.

“More general flavors such as ‘tropical’ or ‘medley’ work best for beverages that target more than one health benefit,” Olson explains.

Complex formulas with electrolytes, probiotics, and other functional additives can produce off-notes. Broad, blended flavor profiles help mask those while appealing to a wide audience.

5. Natural Colors and Sweeteners on the Rise

Consumer scrutiny of artificial ingredients is influencing formulation decisions across the board.

“Natural sweeteners and colors are going to be in high demand due to the negative connotations of artificial flavors and dyes,” says Olson. “These can be challenging to work with in certain pH environments or with bitter additives, but health-conscious consumers are more willing to tolerate slight off-notes if they believe the ingredients are healthy.”

The Functional Beverage Future

From citrus-driven digestive tonics to calming floral elixirs and plant-forward sodas, functional beverages are entering a new era of flavor sophistication. The challenge — and opportunity — lies in delivering both perceived and real health benefits while keeping taste at the forefront.

For brands willing to experiment with botanicals, blended profiles, and natural formulations, the functional beverage market offers more room for creativity than ever before.
