A Flavorist’s Perspective on McCormick’s 2026 Flavor of the Year

,

Exploring the challenges and techniques behind crafting a bold, balanced black currant flavor across beverages, candy, dairy, and bakery.

Black currant has been named McCormick’s 2026 Flavor of the Year, signaling a major moment for this bold, complex fruit across food and beverage innovation. Long appreciated for its depth and intensity, black currant is now stepping into the spotlight as brands look for flavors that feel both distinctive and sophisticated.

To explore what makes black currant so unique and why it can be challenging to develop successfully we spoke with Brandon Olson, Senior Flavorist at Phoenix Flavors & Fragrances, about the critical sensory elements, formulation challenges, and application-specific considerations behind this trending flavor.

Defining the Identity of Black Currant

At its core, black currant is defined by a unique animalic quality often described as catty. This ammoniac, musky nuance sets it apart from other dark berries and gives the fruit its unmistakable character. Alongside this sits a green berry profile reminiscent of blackberry. When used thoughtfully, these notes create authenticity; when pushed too far, they can quickly become polarizing.

There is no single “correct” black currant profile. Development is guided by application needs and, most importantly, client direction. Some customers want a highly realistic expression of the fruit, while others prefer certain aspects enhanced or softened to create a more approachable, consumer-friendly experience. Striking this balance is key to successful flavor design.

Small adjustments can dramatically shift how black currant is perceived. Removing its green or sulfuric facets causes the profile to drift toward grape or generic berry. Overemphasizing them leads to catty or medicinal off-notes. Tannin levels also play a critical role – too little feels thin, while too much becomes harsh. Jammy depth adds richness, but when overdone, it pushes the flavor toward raisin rather than fresh fruit. Each component must be precisely calibrated to preserve identity.

A Fruit More Familiar to Fragrance

One surprising aspect of black currant is how widely it’s used in the fragrance world. Perfumers rely on it for musky, animalic finish notes, where its bold character is an asset. In flavor, however, the challenge is different: keeping black currant distinct from grape or mixed berry while ensuring it remains edible and appealing in sweet applications like candy and beverages.

Challenges in Applications

Black currant is especially vulnerable in beverage systems. Dilution, acids, and sweeteners tend to wash out its green, sulfuric, and tannic cues, leaving behind a generic “purple berry” impression. Without deliberate reinforcement of these defining facets, the fruit’s character can easily disappear.

Sour candy presents an even greater challenge. Extreme acidity and high cooking temperatures strip away nuance, requiring the flavor to be rebuilt from the ground up. Boosted top notes, brighter esters, and a carefully controlled touch of green or tannic character are essential to keep black currant recognizable after processing.

Every format demands compromise. Beverages benefit from softened sulfur notes, candy requires exaggerated brightness, dairy leans into jammy richness, and bakery applications rely on cooked-fruit cues. Each application uses different sensory anchors to signal “black currant,” and shifting any minor note can alter the entire perception of the flavor.

Knowing When It Works

A black currant flavor succeeds when its key elements stay in balance, survive processing, and remain clearly identifiable in the finished product. When those conditions are met, black currant delivers a bold, complex, and memorable fruit experience, one that rewards careful development and thoughtful application.
